The weekly rhythm is simple. Order by the cutoff, and on delivery day an insulated cold box arrives on your porch, no signature needed. Grouper and hogfish weeks, scallop and snapper weeks: the selection rotates with the docks, and boxes come portioned for one, two, or a full house.
